The "Low Iodine Diet" is not much fun as you may already know. Here are some of my own food inventions. If you have a Low-Iodine Diet Recipe you would like to share, E-Mail Me and I will post it on the site. Another good resource for this diet is http://www.thyca.org/rai.htm#diet

Be sure to check ALL labels for any ingredients that may contain Iodine (even fresh meats). If the ingredients contain Salt, there is no good way to be sure the salt is Iodine-free and should be avoided. Always use a low-iodine diet manual from your doctor to be sure the recipes below are ok for your diet. If you are ever not sure, then don't eat it!

Sweet "Hypo" Chicken

Ingredients: Fresh Sliced Apple, Cinnamon, Sugar, Honey, Fresh Boneless Chicken breast from your local Butcher. Always check to be sure meat is pure and free of added ingredients that may contain Iodine! Some "Plain" Chicken Breast from grocery stores have added salt! Checking for Iodine is a must!! You wouldn't want to put yourself through this diet only to find out you have been eating products with iodine the entire time!

** Chicken should be marinated for at least 3 hours in the refrigerator before cooking.

 

Marinating:

Using a Ziploc bag, add desired amount of Chicken. Add one teaspoon of sugar and one teaspoon of Cinnamon for each piece of Chicken breast. Add honey as desired. seal bag and keep in refrigerator for 3 hours.

 

Cooking:

Pre-heat oven to 400 degrees. Lay tinfoil on baking pan. Lay a loose layer of tinfoil across baking pan that is big enough to cover chicken when done and place marinated chick breasts in the center. Fold tinfoil over chicken to cover completely and place in oven. Once chicken is almost done, remove from oven with protective gloves as pan will be very hot, carefully open tinfoil being careful of the steam that will rush out. Add fresh sliced apple, and recover. Return chicken breasts to oven to finish cooking. Be sure the chicken is cooked to a safe center temperature, but do not over-cook as the chicken will be tough.
